Ingredients

of Basmati rice

of Tomato paste

of Peas

of Ground cumin

of Ground black pepper

In a large pot over medium heat, heat the vegetable oil. Then add the chopped onion and sauté until it becomes translucent. Add the minced garlic and continue to sauté for an additional minute

Then add the rice to the pot and stir it with the onion and garlic until the rice starts to change color slightly (about 5 minutes). Next, add the chopped tomatoes and tomato paste, then the spices (cumin, black pepper, salt). Stir all the ingredients well until they are well combined

Then add 2 cups of water or chicken broth or beef broth and bring the rice to a boil. Reduce the heat to low, add the peas, carrots, and sweet corn, cover the pot well, and let the rice cook until it is tender and has absorbed all the liquid

Garnish the rice with chopped cilantro and serve hot
