In a large pot, heat the oil or ghee over medium heat, then add the chopped onion and sauté until golden brown. Add a tablespoon of minced garlic and stir for a minute, then add the meat and brown it well on all sides

After that, add the chopped tomatoes and tomato paste and stir until the ingredients are well combined. Then, add the spices (cumin, coriander, cinnamon, cardamom, turmeric, kabsa spices) and mix well. Pour in the water and bring it to a boil, then reduce the heat and let the meat cook until tender

Wash the basmati rice well and soak it in warm water for 20 minutes. After the meat is cooked, add the soaked and drained rice to the pot. Then, add raisins (optional). Ensure that the amount of liquid covers the rice, then add salt and black pepper to taste

Increase the heat until the mixture begins to boil, then cover the pot and reduce the heat to the lowest level. Let the kabsa cook for 20-25 minutes until the rice is fully cooked and has absorbed all the liquids

Serve the kabsa hot in a large serving dish and garnish with toasted almonds
